The heart is the only organ that works continiously from conception till death. The ancient egyptians when mummifying a corpse would leave the heart inside the chest so that it could be weighted by the gods against a feather, the Symbol of Maat, or "what is right". This enabled them to judge the deceased's suitability for the afterlife.
